Abstract: | The immobilization of the enzymes is one of the most modern processes in the food industry. There are a lot of carriers for immobilization, both of inorganic and organic nature. To choose a carrier is a problem not very easy to solve because it has to protect the enzyme against other factors and to let the enzyme to catalyze the process. |
